For Masala paste

  • A few Coriander leaves : chopped
  • A few Mint leaves : chopped
  • Coconut : 1 (grated)
  • Garlic : 2 to 3 cloves

  1. Add both oil and ghee in a pressure cooker.
  2. When oil is hot add bay leaves, cinnamon, cloves, garlic, star anise and onions. Sauté till onions turns to golden brown.
  3. Meanwhile, grind mint leaves, garlic pods, shallots, coriander leaves, grated coconut and green chillies into paste. Add a little water if you think that the paste is too thick.
  4. When onions turn to golden brown. Add ginger-garlic paste, the ground paste, chopped tomatoes & fry the items for a few minutes.
  5. Now add chilli powder, garam masala, salt & cooked chickpeas to the cooker. Mix it well and allow it cook for 3 minutes.
  6. Now add rice, 2 glasses of coconut milk and 11/2 cups of water to pressure cooker.
  7. Close the cooker lid and pressure cook it for 2 to 3 whistles.
